I feel like I should call this a farm kitchen hack. We’ve spent the summer freezing lots of vegetables and we are starting to really enjoy them in the kitchen. I used one of our “stir fry” kits including: zucchini, squash, onion, and garlic. I cooked them down with some olive oil, salt, and pepper. Once it was really cooked down I added it into my favorite Local Folks Food marinara sauce. It was a great way to add some extra nutrition into a Saturday night spaghetti sauce.
Happy post Merry Christmas to us. Preserving summer harvests makes every difference in dedicating yourself to a real, locally grown and preserved diet. We have hundreds of pounds of frozen summer produce to share with our farm members and customers at Community Farmers Market Bowling Green during the months of January and February.
