I start with a whole chicken, distilled water, salt, pepper, and onion. I like to start at a boil and then decrease the heat to allow a slow simmer for 24 hours. There are times when I need some sooner than that so I’ll increase the heat and decrease the time. This first broth is full of lots of fat and meat flavor. I use it for soups and other recipes that call for it. I pull off the chicken meat and store it in the fridge for future recipes or a quick protein snack. Then all of the bones are pulled apart and recovered with water, salt, pepper, and more onion. I add a tablespoon of apple cider vinegar that helps pull all of the good stuff from the joints and bones. This second batch of broth goes into the fridge or freezer and gets pulled out when where sick, or as has been the case the last few days, eating too much holiday food.
