Garden Vegetable Spaghetti Sauce

I feel like I should call this a farm kitchen hack.  We’ve spent the summer freezing lots of vegetables and we are starting to really enjoy them in the kitchen.  I used one of our “stir fry” kits including:  zucchini, squash, onion, and garlic.  I cooked them down with some olive oil, salt, and pepper.  Once it was really cooked down I added it into my favorite Local Folks Food marinara sauce.  It was a great way to add some extra nutrition into a Saturday night spaghetti sauce.
